The unique products we produce are built upon histories, and we cultivate a menu and experience for people that value those histories and trust the originality that we impart in our products and experiences. There are two layers of history that our business is responding to:

The natural history of this world has piled up the beautiful bounty that we stand on and work with today. The plants and animals of this planet have developed over millions of years, with unique cultivations and variations of which are continually exciting to make decisions from. There is a natural state of struggle that this planet often holds its organisms to, and it is a privilege and beautiful responsibility to present the bounty that has persevered and still exists today.

The human history is a layer over this natural history that we build upon. The means and methods to manipulate our natural world is the beginning of a path for us to follow, with aberrations as our responsibility. To take a method or means and build upon it is to show respect to those from all walks of life that have given us this starting point. Stories come of this and should be told, and can be sad and funny and joyful all at the same time. The spaces we create are forums for these stories, with culinary experiences providing starting points and context for meaningful conversations within our community.
